Sunny Avocado & Citrus Salad
Salad Ingredients
- About 8 cups salad greens of choice
- 2 small oranges, peeled and sliced or in chunks
- 1 large avocado or 2 small avocados, sliced
- 1 cup pomegranate seeds
- 1/3 cup cheese (we love feta or goat cheese!)
- Roasted pepita seeds or pecans
Dressing Ingredients
- 3/4 cup extra virgin olive oil
- 1/4 cup white wine or white balsamic vinegar
- 3 tablespoons fresh orange juice
- 2 tablespoons fresh lemon or lime juice
- 1/4 teaspoon fresh lemon or lime zest
- 1 tablespoon honey or sweetener of choice
- Salt and pepper to taste
Directions
To make the dressing, combine the olive oil, vinegar, orange juice, lemon or lime juice, lemon or lime zest, and honey in a small bowl or jar with a lid. Whisk or shake until combined. Season with salt and pepper to taste.
Assemble the salad by placing the washed greens in a large bowl. Top with pomegranate seeds, orange slices or chunks, avocado slices, cheese and pepita seeds or pecans.
Top the salad with dressing and gently toss before serving.
This salad serves at least 4 folks, and with dressing to spare.
Notes
You will find that this salad recipe is very forgiving. Feel free to add and omit ingredients depending on what you enjoy, and what you have on hand!
This zippy dressing is a great use of our early season navel oranges! You may find that their tartness means you can decrease the lime or lemon juice you need in the dressing. Or, you can increase the honey. It’s all a matter of taste.
Like a bit of a kick to your salads? Infuse jalapeño in the dressing, removing before serving (and taking care that there are no seeds).
