Passionfruit Bars
Ingredients
Crust:
- 1 cup flour
- 1/2 cup butter, softened
- 1/8 cup sugar
Filling:
- 2 eggs
- 1/2 cup granulated sugar
- 1/8 cup flour
- 2/3 cup passionfruit juice
- Zest of one lemon
- 1/8 cup flour
Directions
Preheat oven to 350 degrees.
Blend together crust ingredients with a pastry cutter, knife, and/or your hands.
Press into a greased square pan (8x8 or 9x9) and bake for 15-20 minutes until firm and golden
Whisk together the filling ingredients. Pour over baked crust.
Bake for additional 20 minutes in the oven until filling is set.
Cool, then dust with powdered sugar.
Notes:
If using a 9x13 pan, double all the ingredients.
For additional color, add a splash of unsweetened cranberry juice.
