Passionfruit Vinaigrette
Ingredients
- 5 tablespoons extra virgin olive oil
- 2 tablespoons white wine vinegar
- 1 teaspoon dijon mustard
- ¼ cup passionfruit puree (2 passionfruits)
- 1 teaspoon honey
- 1 tablespoon minced shallot
- 1 clove minced garlic
- Salt and pepper to taste
Directions
Carefully slice open your passionfruit and strain the juice from the pulp and seeds. Add to the blender with the remaining ingredients, minus the olive oil. Blend until smooth. Then, slowly add oil a glug at a time. Upon tasting, add salt, pepper and more honey as needed. Set aside until ready to serve.
Store your dressing in the fridge and enjoy soon after making.

This tart dressing really packs a punch! From salads to salmon, this dressing will add a little pizzaz to a weeknight dinner, and it’s easy to throw together. Or, for an easy appetizer, drizzle it over avocado, tomato or other fresh vegetables, raw or right off the grill.
